Cantillon Cuvée St Gilloise 2017. For Cuvée Saint-Gilloise, Cantillon selects only elegant and refined lambics, allowing the hops to subtly express themselves and maintaining the delicate balance between acidity and bitterness. Unlike a classic gueuze, there is no blending with young lambics, and unlike fruit lambics, no fructose is added. The refermentation in the bottle occurs with liquid sucrose.
Like all beers from Cantillon Brewery, Cuvée Saint-Gilloise is also excellent for extended aging in a good cellar. However, this beer is best enjoyed young, allowing the floral hop aromas to fully express themselves.
