The Cam Peach Lambic is an expressive, artisanal fruit lambic from De Oude Cam, where the purity of the fruit takes center stage. For this cuvée, no less than 1,000 kilograms of peaches are added to 1,500 liters of traditional lambic—an exceptionally generous dose of fruit that guarantees intensity, depth, and natural fruit expression.
The peaches are not processed via infusion or extract, but macerated in their pure form in the lambic. This allows the sugars, aromas, and natural acidity of the fruit to fully blend with the beer. The refermentation takes place in the barrel, where wild yeasts and bacteria combine the fruit and lambic in a slow and spontaneous fermentation process.
As is tradition, this lambic is unpasteurized. The beer remains vibrant and continues to evolve in the bottle, preserving its authentic, wild character.
The aroma elegantly reveals ripe peach notes: soft, lightly floral nuances and a subtle juiciness interwoven with lambic's characteristic fresh acidity. In the background, oak notes from the oak barrels provide structure and finesse.
The palate is dry and refined, with a harmonious balance between lively acidity and natural fruitiness. The peach adds a round, almost velvety dimension without becoming sweet, while its spontaneous character provides complexity and a light, characteristically funky touch.
