The Cam Apricot Lambic is yet another textbook example of how refined and pure a fruit lambic can be when crafted with respect for both tradition and ingredients. The Oude Cam proves once again that craftsmanship and patience make all the difference.

Exceptional mountain apricots—the Orange Ruby and Red varieties—from South Tyrol were used for this cuvée. These apricots are grown at altitude, where large temperature differences between day and night create intense aromas, a distinct freshness, and a natural balance of sweetness and tartness. Dino Sovilla specially picked the fruits fresh from the tree so they could be processed at their aromatic peak.

What makes this lambic special is the way the fruit is added. Not juice, not extract, but whole apricots—stones and skins included—are added fresh to 1,500 liters of lambic. There, they ferment alongside the beer, allowing the sugars, aromas, acidity, and subtle bitterness to fully integrate into the lambic's character. This creates a deep, layered fruit expression that never becomes artificial or overbearing.

The base lambic, spontaneously fermented with wild yeasts and bacteria from the Zenne Valley, forms the perfect canvas. The lambic's natural acidity and the fresh, slightly floral apricot complement each other. The result is not a sweet fruit beer interpretation, but a complex, dry, and elegant apricot lambic.

After the fruit fermentation, a spontaneous refermentation follows in the bottle. This allows the beer to develop further over time, with a fine natural effervescence and additional aromatic depth. In the glass, the beer displays a warm golden-orange color with a subtle haze. The nose is dominated by ripe apricot, light almond notes from the stone, floral accents, and a fresh citrus note. On the palate, the beer is lively, taut, and refreshing, with a long, mineral finish that perfectly balances fruit and lambic.

The Cam Apricot Lambic is not a quick thirst quencher, but a thoughtful, artisanal creation. This is someone who knows his fruit inside and out – and knows how to blend it with lambic without losing the character of either. A fruit lambic with finesse, demonstrating that simplicity and purity often create the greatest richness.
