Boon has always made its traditional beers with lambic that has matured in oak barrels. The brewery now has the world's largest stock of lambic beer in oak barrels, good for 2.1 million liters in 161 oak casks.
The lambic beers of spontaneous fermentation are unique thanks to the microflora of wild yeasts present in the Senne Valley. The Zenne flows between their buildings. You couldn't be closer to the source of these unique yeast cultures!
