With this beer, Cantillon Brewery pays tribute to two brewing elements that were common in traditional beers until the mid-twentieth century: the pronounced acidity created by spontaneous fermentation, and the distinct bitterness resulting from the use of fresh hops, supplemented with a cold-hop addition.

On the nose, Iris presents itself as distinctive and layered. The aroma is carried by a moderate yet remarkably soft, funky undertone, with clear influences of wood and slight oxidative notes. Notes of dry sherry emerge, along with subtle notes of ethyl acetate and leather. These more mature, earthy components are beautifully balanced by sweeter, floral nuances such as honey, elderflower, and even a hint of elderflower syrup, giving the whole a surprising elegance.

On the palate, the beer has a medium body and a soft, refined carbonation. The acidity ranges between medium and medium-high, and is sharp yet controlled, without becoming aggressive. There's also a distinct, but not overpowering, bitterness, which gives the beer structure and depth.

The palate opens with a sour, funky attack, followed by very light vinegary notes that never become intrusive. Citrusy accents provide freshness, while bitter wood, spicy bitters, and sour wood further enhance the complexity. As the beer develops on the palate, notes of old wood, dry sherry, and leather become increasingly evident, contributing to the distinctly rustic character.

The finish is dry and lingering, with a pronounced spicy hop bitterness that lingers for a considerable time. This bitterness enhances the beer's dry character and complements the woody and oxidative notes beautifully.
