With the knowledge to produce sparkling wines, Patrick Theunissen of Dame Jeanne decided in 2012 to switch to the production of brut beers. For this he consulted the oenological center for Champagne in Epernay and brewer Marc Struyf of microbrewery Den Triest.

All their Brut beers are clarified and de-fermented according to the traditional method (méthode champenoise).

Dame Jeanne, from sparkling wine to champagne beer

Dame Jeanne’s roots lie not in beer, but in wine. Founder Patrick Theunissen was active for many years in the production of sparkling wines and fizzy aperitifs. With his passion for effervescent drinks, he immersed himself in the méthode champenoise and gave workshops. In 2012, he decided to translate his experience into a brut beer.

To realise this idea, he turned to the Institut Œnologique de Champagne in Épernay, the historic centre of champagne production. For the base beer, he approached Marc Struyf of the Den Triest microbrewery in Kapelle-op-den-Bos, Flemish Brabant. The result after years of experimentation? A full-fledged beer, crafted with the precision of a champagne producer.

The name Dame Jeanne is a synonym for a demijohn, a large bottle surrounded by a woven basket to protect its contents from breaking. Incidentally, the first Dame Jeanne production took place in the Antwerp neighbourhood of Dam, where founder Patrick Theunissen lived.

 

How Dame Jeanne beers rise to the top

Dame Jeanne produces brut or champagne beer, a luxurious aperitif beer that, thanks to a second fermentation in the bottle – just like champagne – acquires a fine sparkle. It all starts with high-quality Belgian ingredients, including carefully selected hops and natural wine yeasts. The hops provide the typical aromas and flavours, the wine yeasts ensure the elegant bubbles that define Dame Jeanne.

For the second fermentation, Dame Jeanne applies the traditional méthode champenoise. The riddling (remuage) and disgorging (dégorgement) are done by hand. This second fermentation in the bottle takes at least 3 months. It involves the fermentation of twice as much sugar as usual, which significantly increases the risk of exploding bottles. This requires great patience, knowledge and skill.

Thankfully, the effort is worth it. The final result is a beer that’s light, refreshing and complex, with a subtle bitterness and an elegant, dry finish. Not a beer to drink in volume, but an experience that appeals to wine connoisseurs and beer lovers alike.

 

Social engagement and local craftsmanship

Dame Jeanne stands not only for flavour, but also for values. Since 2017, part of the production has been based at the social enterprise Noordheuvel in Brasschaat. There, people with disabilities carry out several important steps in the production and packaging process. Each bottle of Dame Jeanne is therefore not only the result of Belgian craftsmanship, but also of socially responsible entrepreneurship.
