For this edition, the aromatic Valentine rhubarb was chosen, a variety harvested in spring when the stalks are at their juiciest and most flavorful. During maceration, the lambic is given ample time to absorb the characteristic aromas, acidity, and subtle spiciness of the rhubarb.

To achieve an intense, authentic flavor experience, 45 kilograms of rhubarb were used per 100 liters of lambic—a generous amount that guarantees a deep, natural rhubarb note. The result is a lambic in which the distinct, vibrant acidity of rhubarb blends beautifully with the complex, wild fermentation notes so typical of traditional lambics: soft oak notes, light oxidative nuances, and a nuanced, dry character.

This bottling offers a pure and refreshing interpretation of fruit lambic, without added sugars or artificial flavors. The Cam Rhubarber 2018 is a tribute to craftsmanship, terroir, and the power of simplicity—a lambic in which rhubarb and tradition meet in a remarkably balanced way.
