A unique production process was used for this special edition, adding both complexity and character to this anniversary blend.

Suzanne, Hedonis' beloved saison beer, served as the base. This beer underwent an unprecedented treatment: two years of aging in Chardonnay barrels, allowing it to develop an elegant, refined, vinous structure with soft oak notes, subtle fruitiness, and a velvety mouthfeel. To enhance its vibrancy and complexity, Suzanne was then blended with a 100% Brett beer, adding a dry, funky touch and giving the beer a surprising, dynamic intensity.

The end result is a complex, lively, and refreshing beer, where fruity, slightly tart, and funky nuances converge into a harmonious whole that evokes the typical Gueuze vibe, without actually being a Gueuze.
