The 3 Fonteinen Grape Dornfelder is a unique fruit lambic that uses Dornfelder grapes, a dark grape variety originally from Germany. For this specific blend, the grapes came from Wijndomein Hoenshof in Hoepertingen, located in the Haspengouw region. The choice of this grape variety contributes to the deeper, fruity flavors and robust character of the lambic.

During the brewing process, the lambic was combined with freshly pressed and briefly macerated Dornfelder grape juice for four months. This co-fermentation process took place in an oak foeder, which added an extra layer of complexity and wood notes to the taste. After the grape lambic completed its fermentation cycle, it was mixed with fresh lambic wort. This mixture provided the “prise de mousse”, or the second fermentation in the bottle, which makes the fine sparkle in the beer possible.

The fruit intensity in this Grape Dornfelder is impressive, with no less than 51.7% grape juice per liter. This results in a beer with a pronounced fruit character, in which the rich, dark fruit tones of the Dornfelder grapes combine perfectly with the characteristic acidity and ripeness of the lambic.
