3 Fonteinen Intense Red PX is a unique fruit lambic that emerged from an experiment with Pedro Ximenez (PX) sherry barrels. While searching for suitable barrels, 3 Fonteinen came across a batch of PX barrels that, although subtle, had a slightly peaty flavor. Because these barrels were not considered suitable for the Zenne y Frontera project, it was decided to use them for blending lambic with fruit. This led to an innovative creation in which sour cherries play the leading role. These cherries were partly macerated on young, lightly peated lambic and partly on two-year-old pure lambic. This process created an interesting balance between the fresh, young lambic with subtle smoky nuances and the riper, funky, sour notes of the older lambic.

The final blend consists of a combination of young lambic and three-year-old lambic, with 55% of the blend consisting of old lambic. This contributes to the complexity and depth of the taste, with the typical characteristics of matured lambic. Furthermore, the fruit intensity is exceptionally high, with no less than 567 grams of sour cherries per liter, allowing the fruity flavor of the cherries to shine through without overpowering the subtleties of the lambic and the influence of the PX barrels. The blend brings a harmonious combination of rich, ripe lambic, powerful fruitiness and a delicate, smoky touch. This is the first time that 3 Fonteinen has launched such a fruit lambic, using PX barrels with a peaty character in this way, resulting in a layered and expressive taste experience.
