This lambic has undergone spontaneous fermentation, as is typical of traditional lambic beers, but in this specific case the fermentation in the bottle was not completed, so no carbon dioxide was produced. This is exactly what the term "Doesjel" indicates, which refers to the absence of refermentation and the production of carbon dioxide.

Despite the lack of carbon dioxide and foam, the Golden Doesjel has matured in oak barrels, which ensures a beautiful, complex flavor development. The long storage in the bottle further contributes to the depth and evolution of the flavors.
