The refreshing taste of Gose beer
Gose beer is traditionally brewed with a high proportion of wheat, complemented by coriander and salt. Originally, it was a spontaneously fermented beer. Together with these ingredients, this creates a flavour that stands out immediately: refreshingly sour, softly spicy, lightly mineral and highly thirst-quenching. Compared with many other beer styles, Gose has a lively and distinctly summery character. At the same time, Gose beer is more approachable than some other sour beers. Its acidity remains elegant and nicely balanced with the wheat and gentle spiciness.
Modern Goses are no longer spontaneously fermented; they are top-fermented beers. Lactic acid bacteria provide the fresh sour character. As a result, you usually taste light notes of citrus and grain, soft coriander spice and a subtle salty edge. Hop bitterness generally remains low, even lower than in a wheat beer, which means the refreshing character takes centre stage.
Gose, from Goslar to Leipzig
The origins of Gose beer lie in Goslar, a historic town in the Harz mountains. The name refers to the river Gose, which flows through the town. Some sources trace the origins of this beer style back to the Middle Ages. From Goslar, the beer spread through the region and eventually found its way to Saxony.
It was especially in Leipzig that Gose became a true local speciality. Around 1900, it was even one of the city’s most popular beers. The Rittergutsbrauerei in nearby Döllnitz played a major role in this from 1824 onwards. After the Second World War and the later closure of the last producer, Gose beer eventually disappeared from the streetscape.
Comeback and international recognition
The revival began in the late 1980s in East Berlin. Lothar Goldhahn brought the historic Leipziger Gosenschenke “Ohne Bedenken” back to life and managed to convince a brewery in the German capital to brew Gose again. Otherwise, the style might have remained just a footnote in beer history.
The history of Gose is still reflected in the existing breweries in Germany: Brauhaus Goslar (Goslar), Gasthaus & Gosebrauerei Bayerischer Bahnhof (Leipzig), Original Ritterguts Gose (Döllnitz) and Gosemanufaktur (Berlin). Its future is secure thanks to its international spread. Today, there are not only German but also American and, of course, Belgian Gose beers.
Gose beers compared with other sour beers
Belgian gueuze, like Gose, is sour, but it relies on spontaneous fermentation and usually develops a more complex, funkier and more wine-like profile. Wheat beer, on the other hand, shares Gose beer’s high wheat content and summery freshness, but usually lacks the pronounced sour, salty and spicy character that is so typical of Gose. This places Gose neatly between both worlds: fresher and more playful than many classic sour beers, more adventurous than an average wheat beer.
