For its lambic, De Cam uses carefully selected wort sourced from renowned lambic breweries such as Boon, Girardin, and Lindemans. After fermentation, the young lambic matures for years in impressive oak barrels that are over a century old. These barrels originate from the historic cellars of the Czech Pilsner Urquell region and give the lambic its characteristic depth and complexity.
Lambic distinguishes itself from other beers because, like wine, it produces little to no foam. This unique beer is created through spontaneous fermentation: wild yeasts and bacteria from the environment naturally take over the brewing process. In the large oak barrels, the lambic is then given ample time to develop its subtle acidity, woody notes, and refined aromas.
For this bottling, De Cam carefully selected and tasted three-year-old lambic. Only the barrels that were perfectly balanced were bottled—a guarantee for an authentic, pure and rich Oude Lambiek.
