Mamouche is a two-year-old lambic from Brasserie Cantillon, created through spontaneous fermentation with wild yeasts and bacteria found in the Brussels air. The base lambic matures in oak barrels, where time and microflora quietly work their magic. The beer is then enriched with elderflower, the delicate white flowers of which are harvested entirely by hand in early June. Because elderflower is particularly aromatically potent, a two- to three-day maceration is sufficient to deeply ingrain its character in the beer without disrupting its balance.

In the glass, Mamouche presents itself as a pale gold with a light haze. A fine, delicate head forms and slowly dissipates, while subtle bubbles slowly rise. The carbonation is sparse and refined, allowing you to experience the aromatic spectrum without being overpowering.

The first impression on the nose is intensely floral. The elderflower exudes power, yet is surrounded by a soft malty undertone. Behind this lies a stimulating bitterness and a lively acidity reminiscent of biting into a pink grapefruit: fresh, slightly tart, and aromatically expressive. The oak adds a patinated dimension, with subtle earthy and faintly vanilla notes.

At first sip, the surprising bitterness of the elderflower is immediately noticeable. Those accustomed to sweet elderflower syrups or liqueurs will be surprised by this characterful, almost acrid aspect. Yet, it's precisely this bitterness that proves essential: it structures the beer and balances the acidity. Sourness and bitterness merge, evoking intense aromas of pink grapefruit and citrus zest.

After this floral and fruity initial note, the influence of the oak and wild yeasts becomes more evident. Delicate earthy notes, a hint of dust and cellar, and subtle hints of wet hay give the beer depth. Then, typical orchard aromas often found in lambics unfold: ripe pear, soft apricot, and a hint of apple. Everything remains harmoniously interwoven, without any one element dominating.

Compared to Kriek Cantillon, Mamouche is less overtly aggressive and noticeably softer in character. While Kriek often displays a direct and sharp acidity, Mamouche opts for nuance and balance. The bitterness of the elderflower tempers the acidity and creates a rounded, elegant impression. The fine and sparse bubbles allow each aroma to fully express itself.

Each sip unfolds like a pointillist painting, in which floral, citrus, woody, and earthy notes, like tiny dots, form a coherent whole. It is as if the elderflower itself comes to life in a subtle interplay of layers and textures, a fluid composition that favors finesse over power and allows itself to be discovered slowly and thoughtfully.
