For this traditional fruit beer, Schaerbeek cherries were harvested in the summer and fermented with lambic that had already matured for 18 months in wooden barrels. A generous 270 grams of cherries were used per liter. The young cherry lambic was then aged for another 6 months in large oak casks, after which the beer was bottled. The Boon Millésime undergoes refermentation in the bottle and can easily be aged for several more years.

With its modest alcohol content of 6.5%, this Belgian cherry beer is ideal as an aperitif or with a refined food pairing. The distinctive, elegant aroma of the Schaerbeek cherries is fully developed, elevating this beer to a true classic.
