De Cam Rhubarb from De Oude Cam is a traditional fruit lambic in which the fresh, tart flavors of spring rhubarb blend perfectly with the characteristic touch of spontaneous fermentation. For this cuvée, only "Valentine" rhubarb, harvested in spring at the perfect ripening point, is used to guarantee the most vibrant and aromatic fruit expression.

A generous 45 kilograms of rhubarb are added per 100 liters of lambic, with the stalks carefully macerated in the lambic. By using whole fruit, the natural acidity is preserved and the tannins and aromas from the rhubarb stalks are given the opportunity to fully integrate with the character of the lambic. The result is a beer in which the fresh, sparkling tartness of rhubarb blends harmoniously with the earthy, funky, and slightly woody notes typical of traditional lambics.

This lambic undergoes spontaneous fermentation, with wild yeasts and bacteria from the surrounding area initiating the fermentation process, giving the beer a dynamic and complex profile. The end result is a lively, unfiltered, and unaged beer in which the rhubarb adds both strength and finesse. It is clear, fruity, dry, and surprisingly refreshing, with a long finish that beautifully combines fruity acidity and classic lambic notes.
